Faba Bean Salad

Ingredients

2x 420 g cans faba beans, drained and rinsed

1 medium tomato, chopped

1/4 cup fresh chopped parsley

3 tablespoons red wine vinegar

2 tablespoons olive oil

1 teaspoon dried oregano

1/2 teaspoon crushed red chilli

1/2 teaspoon black pepper

1/4 teaspoon salt

Method

  1. In a medium size serving bowl, combine all ingredients.
  2. Toss gently and serve.

Faba beans come in two types, the larger ones ‘broad bean’ and smaller types sometimes referred to as horse or tick beans.
