Curried Egg Sandwich

Ingredients
4 hard boiled eggs, peeled
4 teaspoons low-fat natural yoghurt
1/4 tablespoon curry powder
pepper
4 lettuce leaves, shredded
8 slices wholegrain bread
Method
- Mash eggs, yoghurt and curry powder until combined.
- Spread the egg mixture evenly over the 4 slices of bread.
- Season with pepper.
- Top each with a lettuce leaf and another slice of bread.
- Cut the sandwich in half, or quarters.
Dietitian Notes / Recipe Tips
Depending what taste you are going for, low fat natural yoghurt can be an excellent substitute for cream, mayonnaise or even coconut cream. Using curry powder and other spices is an excellent way to flavour food without using salt.
