This heart-friendly salad is packed with fresh vegetables, tossed in a zesty, lemon dressing and topped with crispy bread. All the veggies that make up this mouth-watering salad contain many nutrients, especially fibre which helps lower cholesterol, blood pressure and blood glucose levels. Fattoush is light and fresh, and is a popular choice to have throughout the month of Ramadan. Having the exact same salad everyday for a month might seem a little bit excessive but, for many of us, iftar is not complete without it.
You won't be able to resist this warm nutritious tumble of goodness with chewy lentils, sweet roasted carrots, crumbly feta and zesty pomegranate seeds. This salad is super easy to make and is the perfect meat-free Monday meal!
All vegetables and unsaturated fat sources such as avocado, olives and most nuts and seeds are great for the heart so we’ve thrown a few ingredients together with a dressing made with macadamia nut oil (you can swap this for extra virgin olive oil) and balsamic vinegar, to show some love to your heart! Serve it as a side salad to some heart healthy fish like salmon.
